這星期開始感受夏天的熱力了。
二姐送了很多去漁港買的海鮮:

之前餐廳每天在員工晚餐前固定開會,
老闆教了我們許多食材的認識,
知道這是躲在礁岩的高級魚,
市場上很少看到,
因為捕獲量不多,
所以都直接送餐廳.....。

龍蝦,看起來很大,但頭占了2/3!
蝦頭和身體分離表示也做不成生魚片了。
飛魚的一夜乾,
小時候討厭的東西,
一次日本行後漸漸愛上的一種料理魚的方式。
處理海鮮前....
先做了剉冰的糖漿....
先讓白砂糖焦化後加入黑糖,
等黑糖也融入焦糖後再放入二砂糖,
最後加入熱水和鳳梨皮小火共煮一小時。
鳳梨放入糖和檸檬汁醃6小時,
再煮成類似果醬的濃度。
這是剉冰的配料之一。
還好當時在餐廳阿雄師父有教我片魚的方法......,
雖然總是做得不那麼俐落。
片出魚頭;下巴;兩片魚身;和魚骨一副。
龍蝦入冷水燒沸後續煮3─5分鐘,
馬上放入冰水冰鎮。
魚下巴部分灑鹽和黑胡椒後入烤箱烤。
魚頭和魚骨煮成豆腐味僧湯。
魚身1/4清蒸。
果然巨魚有著厚厚的一層鮮美肉塊。
冰鎮完的龍蝦去頭剝皮切塊。
沾醬是家裡有的素材,
以薑;蒜;辣椒;醬油;香油;醋;的六味醬。
龍蝦頭對切後再切成小塊狀,
加入吃完魚頭的湯裡,
補上海帶芽和用酒調勻的味僧以及豆腐,
以及半片一夜乾的塊肉,
做成海之味味僧豆腐湯。
弟弟帶回的地瓜葉,
炸了蒜片的油直火快炒....
翻出以前可愛小熊剉冰機.....
可惜昨晚製的冰塊不適和這尺寸,
只好改用VitaMax打出剉冰.....
芒果煉乳+芒果百香冰淇淋。
這是蜜芋頭+鳳梨。
吃成這樣..............
終於動起買了快兩年的滑步機,
用力了半小時....才消耗100多卡路里!天呀!
好吧!
運動完再來泡個檜木澡......
總是多多少少可以提高卡路里的消耗量吧!
汗如雷陣雨下下停停再下下的反覆....
最後在當頭澆下冷水.....一個爽字。
穿著日本浴衣.......
很想走去河邊涼快涼快呢!
可惜──不敢。哈哈哈!
日本真好,可以穿著這身舒適逛大街!

“減肥”這名詞消失在我生命中好些年了,
從音樂轉戰餐飲時期,
不需特意就瘦下10公斤有喔!
永遠的‘站’和永恆的‘走’,
充塞在工作10─11小時內,
不需刻意,自然下來。
廚師會胖的大部分都是頭頭,
用‘嘴’做事的那種。
麵包師和甜點師也不太看到胖的!!!
只是新陳代謝速率和年齡成反比呢!

A lobster seems like a hypocrite. Look at its big head. The rest part is just some bitty meat. Raw lobster meat as sashimi tatses not good. At least in my opinion, it is not delicious, not to mention how expensive it is. I don't get why many people like to eat lobster sashimi. LOL
回覆刪除Although my past life is a Japanese,but I don't like any kind of sashimi,and I like some of fish fillets the misoshilu.Seefood have always been one of my favorite food.The recent Dragon Boat Festival is will come to .I would like to dumplings wrapped in a things.......oyster dry.WOW..Maybe for many people,it is very heavy fishiness.I like this small fishy.
回覆刪除Isn't your last life is a Welsh? Now it turns out a Japanese. Hahaha! Frankly to say, I don't like sashimi though I can eat it. I like shrimps, prawns and lobsters but hate to peel them. I dislike to have crabs. Eating them is really a bitch. I hate to eat fish that has many bones, and I don't think a soft/tender meat fish is delicious. Yes, I love miso soup. Yes, the Dragon Boat Festival is soon coming. Will you make some rice dumplings wrapped with bamboo leaves, "tson tsi", personally? The dry oyster, hummmm...I didn't dare to eat it when I was young, but now it's ok for me to eat it. I used to think it smells bad, ahh..maybe stinky, but now it smells no more that stinky at all. Salmon for me is too greasy. Funny, most of fish that I like are cheap sorts such as shark, "wu guo" fish, and mackerel. I like fillets as well. Anyway, I hate fish bones. By the way, I hope it won't offend you. You can not sync to use "although" and "but" in a sentence. You can just use one. We easily make this mistake because in our language it is a common usage, but it's not correct to use both of them at the same time.

回覆刪除I am first time use English name about Dragon Boat Festival.It's so magical and funny.Should I will personally use bamboo leaves to wrap rice dumplings.And add the stinky of dry oyster.I am very grateful for your correction.Really have a lot fun in the English translation of the inside.With you,I learned many interesting things.
Anyway, now you are a Taiwanese, no matter who you were in your last life. Maybe you were a Welsh living in Japan when in your previous life. Hahaha! Dragon Boat Festival is translated for those foreigners. Yes, it's a funny term. I am glad to know you will make rice dumplings wrapped with bamboo leaves. It will help a lot. LOL. It was so nice to have a phone conversation with you today. I might have taken up much of your time. Hopefully it didn't waste your time too much. Your observation related to me was deep and genuine.
