這是以前餐廳小師父─阿雄的招牌員工餐─泡菜蛋炒飯。
第一次吃到這種炒飯念念難忘。
加上有次老闆很想和我們下班吃宵夜,
索性請我們去通化夜市的一間店,
吃到第一次吃的鹹魚炒飯,
我驚為天人的好吃.....!〈很ㄙㄨㄥˊ喔,都沒吃過〉
這是兩樣好吃東西加起來的合訂版本。
泡菜瀝乾汁液,切成小段;
一夜乾當鹹魚切成丁塊;
又加了一條切片香腸;當然還有蛋啦。
之前吃過第一次後,
常常央求阿雄再做,
還好在他離職前有再吃過一次。
後來在著名韓式料亭的“韓宮”吃過一次,
還沒小師父做得好吃呢!
當時餐廳很重要的食材─蒜片,
是任何內場人練刀工最基礎的工作之一,
好像也是老闆親自教我的惟二東西之一。
每天工作只要有空檔,
人人快刀切蒜片..........刀聲此起彼落。
剛開始切時手指頭往往都被蒜素的辣辣到沒知覺....
都很奇怪其他人怎麼都不會,
原來真的是──習以為常。
厲害的阿龍還能一次三顆齊切哩!
我怎麼也學不來......勉強可以2顆。
練到後來,也果真練出切蒜片的好刀法。
可是我從來沒炸過!!!
每每只要經過儲放蒜片的蒜片桶;
或新炸完正在報紙上瀝乾餘油時,
一定手抓一把單吃...........。脆酥可口又美味。
蒜片切得夠好就是厚度一致。
前方較黑部分是過頭了,多放了一分鐘在熱油裡,
即使是關掉火。
那種黑掉;過頭的蒜片會有苦味。
尚未潮掉的蒜片,酥脆可口。
拌入炒青菜或是義大利麵裡共炒,
雖然會被水分稀釋變成還原的白色,
但稀釋的香氣也跟著融入食物內裡了。
左邊是和充滿蒜香的榨油一起存放;
右邊是單純密封的蒜片。
剩下一點點蜜芋頭+黑糖糖水和冰塊打成冰沙。
新鮮的鳳梨〈不想再蜜過〉酸香十足平衡冰沙的甜度。

How about salmon egg stir-fried rice? I like eating it. Fried sliced garlic sounds nice but not perfect. I prefer the fresh garlic.
回覆刪除Salmon egg fried rice is great!But sine eating salted fish fried rice,it becomes less appealing to me.It really has a strong Taiwanese flavor!Should be a heritage from the mid─20th century suffering Taiwan period,right?Do you have eaten?Normally I habit to use fresh garlic.The fried garlic less pungent taste.I think that as a snack foods to it eat!
回覆刪除When I was a kid, there was a kind of red pickled fish fillet, and I felt it was very tasty. It was somewhat hard. Also there was another kind of pickled fish that was made of the whole fish which I didn't know what sort of fish it was. It was yummy though very salty. In the past time lacking materials, they were very delicious when I could have them. Yes, I do remember those past times.....Ahhh..fried garlic eaten as munchies sounds weird or novel to me. I have never heard of such. Raw garlic smells spicy. It is very good to match the roasted sausage.
回覆刪除Salted fish such food used to hate.I more often see the pickled yellow salted fish.Sausage with garlic is a classic Taiwanese snacks.few people would hate it.Apart from me,because I can not eat raw garlic.Haha...Eryngii in the past is just a dish,and later also become a dry dehydrated snacks.So deep─fried garlic snack,why not!
回覆刪除You are teaching me something new. I have not known this word "eryngii". I looked it up in the dictionary but fallied, so I googled it, and found out it is a kind of mushroom. Really? there is the dehydrated eryngii as a snack, huh? I have not seen it in the market yet. This is a democratic country. You can do whatever you want as long as it is not illegal. LOL. why can't your fried garlic be a snack? hahaha!
回覆刪除Eryngii is Taiwan's 杏鮑菇.Before this,I don't know have this word.Directly using the mushroom word.The eryngii dry before staff travel and boss wife bought for us to eat.Cut into thin sliced after dehydrated and flavored “wasabi”.It's very delicious.Maybe you can find it in the New Year street market or snack stores.
回覆刪除Eryngii is welcomed and seen commonly in the market nowadays. I like it. It is delicious when being braised with pork and soy sauce. Wasabi flavored dehydrated eryngii sounds tasty, because I like wasabi. However, seemingly many wasabi products are made of the artificial wasabi.
