今天的粽香又濃〈麻竹葉的清香〉又延綿不止.....
因為整個下午鍋裡煮鹼粽的水,
蒸騰不息。
昨天下午做完鹹粽,
又著手鹼粽相關準備的泡米;煮紅豆。
3斤圓糯米分成普通鹼粽2斤,
剩下1斤準備做成湖州豆沙粽。
沒把紅豆做成豆沙,
改做紅豆粒餡〈自己比較喜歡〉。
當我自己包完這1斤五顆的碩大湖州豆沙粽時,
爸爸已經完成20顆普通鹼粽啦!
剩下10顆紅豆鹼粽還好我有包到......哈哈!
本來2斤應該可以做成40顆,
因為我的“中國米食”書內沒有寫要泡米,
爸爸一直懷疑這樣行嘛?
所以米粒完全沒有漲大,
但沒想到這樣可以差到10顆的差距。
湖州豆沙從冷水起始煮,鹼粽要沸騰時入鍋;
時間拿捏剛好哩!
蒸騰了一整個下午的4個多小時,
終於完成。
湖南豆沙粽要熱食;鹼粽最好冰冰的吃;
我根本顧不上.....起鍋吊掛起來後馬上拍食起來。
紅豆餡粒應該要先冷凍比較好操作........
去三峽老米店買米時,
老闆配好的鹼水有點過多,
他的配比應該是1斤對30g鹼水,
所以味道有點太過分了些。
覺得應該可以用20g就好了。
然後包裝裡有一包小粉末老闆沒說是甚麼,
爸爸猜想應該是硼砂,
是要用在煮水裡最後一個小時加入,
可增加粽子Q度;吸收多餘水分;避免粽肉和葉子沾黏;
當然...我是沒加的,
只在煮水中加一滴滴的沙拉油。
書上說如果綁得太緊,
靠近紅豆餡的米粒會不熟,
還好我的應該沒有生米的疑慮....。
和爸爸完整做完這次《粽子任務》,
有點小忙了下下,
看書;找資料;備料;蒸煮;
比例上準備3個小時的話,包的時間只要半小時。
其實也是仰仗著之前爸爸包了一次────
難得好吃的鹼粽。
真的很難很難很難....的....非常難得喔!哈哈哈!
才敢決定做這樣的嚐試。
家有一老,若有一寶,實在沒錯......。

Thank you very very much! You're awesome! I feel as if I were a thief to rob your "tsong-tsi". Yes, I feel I am like a scrooge. It is so wonderful to have you as a dear friend. Borax can not be used legally. They didn't give you that, did they? I know you would not add it into the alkaline "tsong-tsi". My mom tried to be a matchmaker this evening. Hahaha! She likes to do that! Your father is really a gem. How does he know so many things about cooking or making our traditional food?
回覆刪除"tsong-tsi"─Is it meaning 東西?haha!About the borax and alkaline.The alkali rice dumplings in Taiwan have been necessary to add alkaline.So I do Hu─Zhou red been dumplings.The dumplings that two "tsong-tsi" both don't increase.When you buy glutinous rice,usually the store will be equipped with a complete dose.I can't believe of even to this age there are someone be a matchmaker for me,haha.My father was likes to cook.Especially glutinous rice class.But often boast about the things he has done for me.
回覆刪除Maybe I should have spelled "zong-zi" instead of "tsong-tsi" which is so called rice dumplings. I am sorry to confuse you. I would assume alkaline rice dumplings are just fine because we have too much of acids within our bodies. Without alkaline, you can not make that traditional rice dumpling. Marriage isn't the only way to live though it can be sometimes better. I have a friend who married at his 50 years old. You are still young, at least younger than he. No wonder Mom tried to be your matchmaker. Some old people like to boast about how good they are. Frankly to say, sometimes they are really good. LOL
回覆刪除Yes, the phonetic of the word is relatively easy to understand.Everyone has good and bad two aspects.Carry forward the good and hidden evil.Will inspire the people want the matchmaker basically see the good side.When I was young I tried to establish the marriage relationship is not right for me.Even know the benefits of marriage, is not suitable for their own do not have to reluctantly enter.That's all.
